Cilantro Avocado & Shrimp Salad
1 cup Chopped red onions
3 Squirts of fresh Lime Juice
1 tsp Olive Oil
¼ tsp Kosher Salt
Black Pepper (To Taste)
2 lbs Jumbo Cooked,Peeled Shrimp
2 Medium Tomatoes (Diced)
3 Medium Avocado halves (Diced)
2 Jalapeños (Diced) ( Depending on level of spice)
2 Bunches of Cilantro

In a large bowl combine red onion, lime juice, olive oil, salt and pepper. Let them marinate for a few minutes to mellow the flavor of the onion.

In a large bowl combine chopped shrimp, avocado, tomato, jalapeño.

Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.
