Spinach,Broccoli, Mushroom & Bacon Frittata
Preheat oven to 350 degrees F
In a bowl whisk together eggs, coconut milk, salt, and pepper
Set aside an 8- inch pan to fry bacon
Transfer to a paper towel-lined plate
Reserve 1 Tsp of pan drippings
In the same 8- inch skillet with the pan drippings, cook onion until its soft (3 minutes)
Add mushrooms and cook for 3 more minutes
Add broccoli and cook it until its soft. Then return the bacon to the pan
Pour eggs over the broccoli mixture
Bake for 15-20 minutes or until the eggs are set
remove from the oven, allow to cool for 5 minutes
Cut into wedges and serve!
