 6 Large Eggs
 2 cups Cubed chicken breast
 2 tbsp Full-fat coconut milk
 2 tsp Fresh Thyme ( Finely Chopped)
 Salt & Pepper to taste
 2 ½ tbsp Extra virgin olive oil
 1 ½ cups Fresh mushrooms
 1 ½ cups Chopped broccoli
 1 Clove of garlic ( Minced)
 3 tbsp Sliced green onions

Preheat oven to 500 degrees F

Cut chicken breast into cubes

Season with jerk seasoning ( Homemade or Store Bought. Always should be sugar-free!)

Combine eggs, coconut milk, thyme, salt, and pepper into a medium bowl

Heat the olive oil in a medium to a large saucepan over medium heat

Add mushrooms, broccoli, and green onions. Then saute

7

In a baking pan, add eggs, and sauteed vegetables, stir and place in the oven

8

Cook for 10-15 minutes until the eggs set

9

Remove eggs, let them sit for 3 minutes

Serve!
