EPIS (Haitian Spice) (Eh-Piece)

The Caribbean is filled with lots of herb and spices that you can’t find here in the US. But, there are a lot of traditions in the Caribbean that we can duplicate to get that island feel when we eat. In Haiti they make a spice blend they call ‘Epis’, (Eh-Piece) a blend of onions, scallions, garlic, parsley, bell peppers, and other spices. This is the foundation for most Haitian dishes. Many Haitians always have it in their refrigerators . This spice can be added to pretty much anything; marinades, sauces, soups etc. Here is the recipe to the Haitian spice and to follow, is how to make baked wings with it.

 1 small onion, chopped
 ½ green pepper, chopped
 ½ yellow pepper, chopped
 6 scallions, chopped
 6 6 garlic cloves. Chopped
 1 cup parsley, chopped
 ½ cup olive oil, or canola oil
 6 basil leaves

After gathering and chopping all the veggies, place in a food processor until smooth. In Haiti they make it with a mortar and pestle.

Epis can be made 5 days ahead; cover and chill, or freeze up to one month (I like to put them in ice cube trays and pop one out when I need it)
