 ½ tsp Apple cider vinegar
 1 cup Baby Greens
 ½ Carrot
 1 ½ Clove of garlic
 ½ lb Ground Beef
 ¼ Onion
 ¾ tsp Salt
 ¼ cup Water
 ¾ tsp Black pepper
 1 ½ tsp Homemade mayonnaise

Chop the onion and reserve a few Tbsps for garnish

Transfer all the remaining onion to a cast iron skillet over medium heat.

Add carrot and garlic and stir to combine. Cook for 5 minutes then add the ground beef

Season the meat with salt, pepper, apple cider vinegar, and water

Stir to combine and cook until meat is browned and water has evaporated

While the meat is cooking prepare a large plate or bowl. Place the greens onto the plate or bowl.

Top the greens with two large heaping spoons full of taco meat

Garnish with reserved chopped onion and a dollop of mayonnaise
