EPIS (Haitian Spice) (Eh-Piece)By kickasscultureThe Caribbean is filled with lots of herb and spices that you can’t find here in the US. But, there are a lot of traditions in the Caribbean that we can duplicate to get that island feel when we eat. In Haiti they make a spice blend they call ‘Epis’, (Eh-Piece) a blend of onions, scallions, garlic, parsley, bell peppers, and other spices. This is the foundation for most Haitian dishes. Many Haitians always have it in their refrigerators . This spice can be added to pretty much anything; marinades, sauces, soups etc. Here is the recipe to the Haitian spice and to follow, is how to make baked wings with it.
Ackee & SaltfishBy kickassculture"As a child, I learned to carefully pick ackee, clean and cook the fruit that grows so abundantly from our tree. This is the ultimate "tree to plate" in 30 minutes or less. But the ackee tree was central because no Sunday breakfast is complete without this toxic fruit, sizzled with salted cod fish, onions and tomatoes, and if you're Babylou, maybe a little corned pork to tun up di flava. But if Ms Peggy from down the hill were coming over, a very generous portion of black pepper would be expected (like who wants that much pepper for breakfast?)." - Tomme Beevas, Founder/Partner Pimento
