EPIS (Haitian Spice) (Eh-Piece)

 1 small onion, chopped
 ½ green pepper, chopped
 ½ yellow pepper, chopped
 6 scallions, chopped
 6 6 garlic cloves. Chopped
 1 cup parsley, chopped
 ½ cup olive oil, or canola oil
 6 basil leaves

After gathering and chopping all the veggies, place in a food processor until smooth. In Haiti they make it with a mortar and pestle.

Epis can be made 5 days ahead; cover and chill, or freeze up to one month (I like to put them in ice cube trays and pop one out when I need it)
